A No-Bake Sweet Snack? Yes, Please!

My studio (TruFit Personal Training in downtown Evanston) recently hosted a workout and workshop all about menopause. Yes, it’s “hot topic” (because we’re finally actually TALKING ABOUT MENOPAUSE!!!!) AND it’s been one that the coaches at TruFit and our health pro friends have been very versed in. Because of that we had TruFit’s own trainer Nicole Dessoye show our guests what strength training could look like in real life (vs what they might see an influencer do…) and then we busted some nutrition myths with our registered dietician pal Margaret Dahl. It. Was. AMAZING.

After our guests got nice and sweaty during their workout, they were treated to some post-workout snacks during the nutrition workshop and YOU, lucky reader, get to have one of our recipes for our amazingly addictive snack: The Energy Bite! Bonus: Depending on how you make it, it’s also vegan and pretty much allergen-free.

Ingredients

2 cup old-fashioned oats (if you have Celiac make sure they’re certified gluten-free, like Bob’s Red Mills)

1 1/3 cup toasted unsweetened shredded coconut

1 cup sunflower butter (or whatever nut butter you'd like if there’s no nut allergy)

1 cup ground flaxseed meal

1 cup semisweet chocolate chips (I used the Enjoy Life vegan chips)

2/3 cup honey (use agave or date syrup to make these vegan)

2 teaspoon vanilla extract

Directions

Put all the ingredients in a bowl and mix together (I highly recommend using gloves so your hands aren't full of oats and flaxseed meal). Put in the fridge for an hour or so. This will make it easier to form the bites.

Then, take a spoon or cookie scooper and form your energy bites into balls! Enjoy!
